French Toast

I’m not huge on fancy breakfasts. I usually have an obscene amount of French-press coffee with oatmeal and fruit. However, if I’m cooking for company or even better- folks that don’t realize how limitless a vegan diet is, I make French toast. Its easy to prepare and guaranteed to be as delicious as its non-vegan rival.

French Toast

1 block tofu (medium to firm)
1 cup soy milk
1/2 tsp cinnamon (more or less to taste)
1 Tbsp sugar
1 Tbsp vanilla
4 slices bread

  1. Place all ingredients (besides the bread) in a blender. Blend until smooth. Pour into shallow dish.
  2. Heat a little bit of oil in a nonstick pan over medium heat.
  3. Dip both sides of each bread in blended batter mixture and coat evenly. Fry in pan until nice and golden brown on each side, flipping occasionally. Keep a good eye on it to prevent the bread from burning…it cooks up quickly.

Serve with soy butter/margarine, warm maple syrup and /or powdered sugar.
